Marinate cubed tofu in soy sauce in a plastic bag. Let sit while you complete the next step, or at least five minutes.
Place chopped sweet potato in the air fryer. Lightly spritz with oil/cooking spray. Cook at 400 degrees for 4 minutes.
Add marinated tofu in the air fryer next to the sweet potato. Cook together for 4 minutes.
Lastly, add the broccoli florets next to the tofu. Spritz with oil spray and sprinkle salt and pepper to taste. Cook for an additional 3 minutes.

Notes
To increase the serving size, cook each item separately and build your bowl in segments. Start with the sweet potato, set aside, then tofu, set aside, then the broccoli florets.
