Turkey Bolognese

Recipe curtesy of Prime driver Chris and Leslie. All of their cooking equipment and groceries for this recipe are from Walmart! A great pasta dish but much lower carb, higher protein and fiber because of the type of pasta used, plus veggies and turkey.

  • In a skillet, cook the mirepoix and bell pepper. Add diced tomato. Let simmer, 20-30 minutes until reduced.
  • While the veggies are cooking, boil the pasta in 2 cups of water for about 12 minutes.
  • Add the spinach and cook until wilted. Remove from pan.
  • Brown the ground turkey with minced garlic and Italian herbs. Add turkey back into the veggies, add the noodles and top with Parmesan!
