An easy throw together meal that is perfect for meal prep and very heart healthy. Eggs contain healthy fat and protein. The fiber included from the plant ingredients help with heart health as well!
Make hard boiled eggs or buy boiled eggs, peel and chop them up.
In a large bowl, mix the chopped eggs with everything except the bread and veggies, then set aside.
Slice the tomatoes and toast the bread if desired. Assemble the sandwich: toast, tomato, egg salad, baby kale, hot sauce (optional), toast. Simple and delicious!
