Ingredients
  

  • 1 1/2 lb skinless chicken breast cut into pieces
  • 3 tbsp sesame oil
  • 1/4 cup coconut aminos
  • 2 tbsp soy sauce
  • 4 tbsp garlic powder or fresh, minced
  • 3 tbsp ginger powder or fresh
  • 1 tsp crushed red pepper
  • 0.5 cup water
  • 1 cup basmati rice
  • 16 oz stir fry veggies

Instructions
 

  • Add the rice to the instapot, then the water, then layer the chicken on top. Pour the flavor ingredients on top- soy sauce, coconut aminos, garlic, ginger, and red pepper.
  • Turn Instant Pot to poultry and set timer for 3 minutes. Lock the lid in place
  • Turn off the heat when the timer beeps. Carefully use a dishtowel to do a quick pressure release.
  • Add the veggies in and turn to Pressure cook, on High, for 1 minute. Once it beeps release the pressure and portion into 4 bowls.
