Mexican Egg Scramble

Equipment

Ingredients
  

  • 1/2 tbsp olive oil
  • 12 eggs
  • 1 onion
  • 2 bell peppers
  • 1 can black beans, rinsed and drained finely diced
  • 1 cup non fat Greek yogurt
  • 1/2 cup part skim shredded mozzarella
  • 1 cup salsa

Instructions
 

  • Add oil to a large electric skillet, cook the onion and bell peppers for a couple minutes.
  • Add the eggs, cheese, , beans, and a splash of water. Scramble while cooking, before totally set, add the Greek yogurt. Provides a significant amount of protein plus great for gut health!
  • Divide into 5 servings, add salsa on top.
