
Mexican Egg Scramble
A quick one pan meal to start out with plenty of fiber and protein.
Equipment
Ingredients
- 1/2 tbsp olive oil
- 12 eggs
- 1 onion
- 2 bell peppers
- 1 can black beans, rinsed and drained finely diced
- 1 cup non fat Greek yogurt
- 1/2 cup part skim shredded mozzarella
- 1 cup salsa
Instructions
- Add oil to a large electric skillet, cook the onion and bell peppers for a couple minutes.
- Add the eggs, cheese, , beans, and a splash of water. Scramble while cooking, before totally set, add the Greek yogurt. Provides a significant amount of protein plus great for gut health!
- Divide into 5 servings, add salsa on top.
