Sheet pan meals

Sheet pan fish tacos

  • Cut up an onion and place on sheet pan with parchment paper, bake at 400 degrees for 15-20 minutes
  • While the onion is caramelizing, create taco seasoning from 1 Tbsp each of chili powder & cumin, 1 tsp each garlic powder, salt, pepper, and paprika.
  •  Cut 2 pounds of fish of choice into 1-inch strips, drizzle with olive oil & lime and season with the taco seasoning
  • Add to the sheet pan and bake for 10-12 minutes
  • Cut up 1 small red cabbage into small strips

Portion out 6 servings into corn tortillas with toppings like queso fresco, lime juice, pico de gallo, or avocado

Or if refrigerating them for future meals, portion into containers without the corn tortilla

Bell Pepper & Cheese Egg Cups

  • Preheat oven to 400 degrees & line sheet pan with parchment paper
  • Take 4 bell peppers, cut in half through the stem, remove seeds, sprinkle with salt, pepper, and paprika
  • Bake for 15 minutes
  • Take pan from oven, crack 1 egg (8 eggs total) into each pepper, then sprinkle with 1-2 Tbsp of shredded pepper jack
  • Bake another 15-20 minutes or until eggs are set

Smoothie recipe

Fruity smoothie

  • 1/2 or 1 frozen banana
  • 1 cup frozen blueberries
  • 2 Tbsp ground flax seed
  • 1 cup baby spinach or serving of greens powder
  • 2 cups fluid such as unsweetened coconut milk, water, unsweetened almond milk, unsweetened soy milk, or cow's milk
  • 1/2 cup plain Greek yogurt or vanilla flavored with no added sugar such as Oikos, Great Value light Greek, Dannon light and fit, Two Good or Ratio brands

Blend until smooth

Crockpot meal

  • If you want a carb serving, pair with 1/2 cup from a microwavable bag of quinoa or rice

Instapot meal

Instant pot veggie packed chicken chili

Stove top or electric skillet

Skillet pork chops with peas, carrots, & pearl onions

  • To have more fullness post-meal without extra calories, increase to 4 carrots and an entire head of celery

Meal prep tips for the road

Storage can be a big issue when it comes to meal prep on the truck

1. Drivers recommend investing in a vacuum sealer to store weeks of food at a time without going bad and taking up tons of space

Cleaning tips for the road

  1. Dawn spray soap- cuts through the grime leaving minimal scrub time
  2. USB rechargeable spray bottle- powerful & helpful tool that holds 1 Liter of water at a time
  3. Eat cleaner food grade wipes- quick swipe of fruits, veggies, even dishes so it saves a bunch on water
  4. Collapsible dish pan- space saving equipment that also doubles as a cutting board
  5. Large water container with spigot- set to the end of doorway & clean dishes on step
  6. For blenders- clean quickly by simply filling halfway with water + dab of soap, turn on for 30 seconds to 1 minute, drain, then rinse with plain water
  7. Parchment paper makes for easy cleanup when using pans or dishes in the Galanz or standard oven
