Egg Burrito
A delicious egg burrito filled with fried eggs, cheese, and your favorite toppings wrapped in a warm tortilla.
Ingredients
- 3 eggs
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp shredded cheese
- 1 tortilla 8-inch. If you want higher fiber for blood glucose control, look for Mission carb balance, Ole xtreme wellness, Mama Lupe high fiber options as well.
- 1 tsp chives optional
- 1 tbsp salsa optional
- 1 tbsp plain greek yogurt optional
Instructions
- Coat a small non-stick skillet with non-stick spray and heat it over medium-high heat. In a small bowl, whisk together three eggs with salt and pepper to taste (¼ teaspoon salt and pepper).
- Add the egg mixture to the heated skillet and sprinkle it with 1 teaspoon of chives(optional) and 2 tablespoons of shredded cheese.
- Cook the eggs without moving them until they are almost set, approximately 2 minutes. Use a rubber spatula to gently release the eggs from the side of the pan.
- Place the tortilla on top of the eggs and cook for an additional 30 seconds. Flip the tortilla and eggs together, then cook until the eggs are set, for about 30 seconds to 1 minute longer.
- Using a spatula, gently fold over one-third of the tortilla, and then fold over once more to create the burrito. Continue cooking to toast the tortilla, for about 30 seconds longer.
- Serve with plain greek yogurt and salsa.
