Tomato, Mozzarella, and Basil Scrambled Eggs in a Jar
Ingredients
- 1 oz fresh mozzarella
- 2 large eggs
- 1 tbsp milk
- 3 large basil leaves roughly shredded by hand
- 3 cherry or grape tomatoes roughly chopped if desiredt
- dash salt
- dash pepper
Instructions
- Add the eggs, milk, mozzarella, basil, and a pinch each salt and pepper to a jar or a bowl. Screw the top on tightly and shake vigorously until well mixed, about 20 seconds. Or mix with a fork.
- Remove the top and microwave for 60 seconds, then in 15 second intervals until just set. Top with the tomatoes and fold in.
