
Citrus feta salmon with broccoli and sweet potatoes
Sheet pan meal for the oven, but can be cooked in the air fryer if you reduce the recipe by half. Adapted from eating well.com
Ingredients
- 1 tsp chili powder
- 2 medium sweet potatoes peeled if desired, cut into 1 inch cubes
- 1 tsp olive oil SPRAY bottle
- 1/2 tsp each of salt, pepper divided
- 16 oz broccoli florets
- 1 & 1/4 pound salmon cut into 4 portions
- 2 oz lime juice
- 1/4 cup feta crumbled
- 1/4 bunch cilantro chopped
Instructions
- Preheat oven or air fryer to 425 F. Line baking sheet with parchment paper.
- Chop sweet potatoes into cubes, then spray with olive oil, salt, and pepper then roast for 15 minutes
- Toss the broccoli with the other half of olive oil, salt, and pepper
- Take out the pan and move the sweet potatoes over to the side to make room to place the salmon in the middle, and add the broccoli to the sides. OR if cooking in Galanz, continue cooking for 15 minutes, then cook the salmon another 15 separately.
- Spray olive oil and add chili powder over the salmon then bake for roughly 15 minutes or until the salmon is flaky.
- Divide into 4 portions, sprinkle with the cheese, cilantro and lime juice
