Ginger-Lime Glazed Power Bowls
This delicious, wellbalanced recipe is a great meal option while on the road!
Equipment
Ingredients
- 1 whole small sweet potato chopped; can also get pre-chopped sweet potatoes in the produce section.
- 8 oz tofu extra firm. 1/2 of a standard package. OR a diced or whole chicken breast
- 6 oz broccoli florets pre-cut in the produce section.
- 1 tbsp coconut aminos can substitute low-sodium soy sauce.
- oil spray
- salt to taste
- pepper to taste
- 1 recipe Creamy Ginger-Lime Sauce
Instructions
- Marinate cubed tofu in soy sauce in a plastic bag. Let sit while you complete the next step, or at least five minutes.
- Place chopped sweet potato in the air fryer. Lightly spritz with oil/cooking spray. Cook at 400 degrees for 4 minutes.
- Add marinated tofu in the air fryer next to the sweet potato. Cook together for 4 minutes.
- Lastly, add the broccoli florets next to the tofu. Spritz with oil spray and sprinkle salt and pepper to taste. Cook for an additional 3 minutes.
- Enjoy with Creamy Ginger Lime Sauce found on the DHF website!
Notes
To increase the serving size, cook each item separately and build your bowl in segments. Start with the sweet potato, set aside, then tofu, set aside, then the broccoli florets.Â
