Instant Pot Garlic Chicken
A balanced meal with lean protien, non-starchy veggies, and a complex carb source all in one pot!

Ingredients
- 1 1/2 lb skinless chicken breast cut into pieces
- 3 tbsp sesame oil
- 1/4 cup coconut aminos
- 2 tbsp soy sauce
- 4 tbsp garlic powder or fresh, minced
- 3 tbsp ginger powder or fresh
- 1 tsp crushed red pepper
- 0.5 cup water
- 1 cup basmati rice
- 16 oz stir fry veggies
Instructions
- Add the rice to the instapot, then the water, then layer the chicken on top. Pour the flavor ingredients on top- soy sauce, coconut aminos, garlic, ginger, and red pepper.
- Turn Instant Pot to poultry and set timer for 3 minutes. Lock the lid in place
- Turn off the heat when the timer beeps. Carefully use a dishtowel to do a quick pressure release.
- Add the veggies in and turn to Pressure cook, on High, for 1 minute. Once it beeps release the pressure and portion into 4 bowls.
