Turkey Bolognese
Recipe curtesy of Prime driver Chris and Leslie. All of their cooking equipment and groceries for this recipe are from Walmart! A great pasta dish but much lower carb, higher protein and fiber because of the type of pasta used, plus veggies and turkey.
Ingredients
- 1 pint mirepoix can buy pre-made, or to make: dice small 2 parts onion, 1 part each celery and carrot
- 1 tomatoes diced, or do the pre-chopped version
- 1 bell pepper any color, diced
- 1 cup spinach
- 1 cup Barilla protein plus farfalle multigrain pasta
- 2 tsp minced garlic
- 1 tbsp Italian herbs
- 1/2 lb lean ground turkey
- 2 oz Parmesan cheese
Instructions
- In a skillet, cook the mirepoix and bell pepper. Add diced tomato. Let simmer, 20-30 minutes until reduced.
- While the veggies are cooking, boil the pasta in 2 cups of water for about 12 minutes.
- Add the spinach and cook until wilted. Remove from pan.
- Brown the ground turkey with minced garlic and Italian herbs. Add turkey back into the veggies, add the noodles and top with Parmesan!
