Instant Pot Chicken Burrito Bowl
Throw together this Chipotle-like burrito bowl in under 25 minutes for a balanced, protein and fiber packed meal prep recipe. Top with sour cream/greek yogurt, cheese, gauc, or salsa.

Ingredients
- 1 pound chicken breasts boneless, skinless
- 1 tbsp olive oil
- 1/3 cup yellow onion diced
- 0.5oz package fresh cilantro may substitute for 1.5 tbsp dried cilantro
- 2 tbsp taco seasoning
- 1 cup salsa verde or adobo sauce
- 1 cup chicken broth or water, add an extra tbsp of taco seasoning if using water
- 1 can diced green chiles 4 oz
- 1 can black beans drained and rinsed, 15 oz
- 1 cup brown rice
- 4 cups shredded lettuce or spinach Divide among the 4 servings after the instapot has completed cooking.
Instructions
- Heat the instant pot to saute. Add in the olive oil. Dice yellow onion and then saute for 3-4 minutes. Stir occasionally.
- Cut the chicken into 1 inch pieces. In a bowl, combine chicken pieces with taco seasoning and chopped cilantro. Set aside.
- Add in seasoned cubed chicken, followed by the salsa, chicken broth, diced green chiles, and black beans. Stir to combine ingredients. Pour rice on top of all the ingredients (do not stir!). Attach the lid and seal. Be sure the valve on top is set to sealing and not venting.
- Turn the pot on high for 10 minutes. Natural release for 2 minutes and then quick release by turning the valve to venting (be careful and use a towel or pot holder so the stream doesn't burn your hand). Serve and garnish with your favorite toppings.
