Lentil stew
Warm, comforting meal you can throw together in a flash. Most of the ingredients in here are pantry products so this is a good recipe to keep on hand when you run out of other prepped meals!
Ingredients
- 15 oz cooked lentils I used a can so they are already cooked
- 15 oz tomatoes canned variety like rotel if you like more spice or just regular tomatoes
- 3/4 cup Plain greek yogurt I used the non-fat variety for lower calories
- 2 Tbsp sriracha
- 2 Tbsp cumin
Instructions
- Mix all of the ingredients into large bowl or divide into 3 servings
- Microwave for 1-3 minutes
