Black bean quesadilla recipe
No cooking skills required. Just pop this tasty dish into a microwave or air fryer (for extra crispiness) and enjoy. For a lower carbohydrate meal use a low carb wrap.
Equipment
- air fryer optional
Ingredients
- 15 oz canned black beans
- 6 street taco tortillas or low carb wraps like Extreme Wellness or Mama Lupe carb control
- 12 mini bell peppers or 2 regular sized bell peppers
- 1 cup salad any type of leafy greens will work
- 3 tbsp each cilantro & green onions optional
- 6 tbsp salsa
- 1 cup Part skim mozzarella dairy or vegan option
- 1 tbsp mrs Dash southwest seasoning blend
Instructions
- Drain the beans, then add to a bowl with the cilantro and seasoning blend and mash with a fork
- Dice bell peppers, shred the leafy greens by hand if desired
- Portion the leafy green onto the tortillas, then portion a couple spoons of the bean mixture onto each tortilla, then layer with salsa, cilantro, and cheese
- Place the tortillas together or add another on top of each, and microwave for 1-3 minutes
