Turkey sausage and kale soup
Easy, quick meal with great flavor that hides the kale well if you are not a kale lover 😉 Provides a whopping 8g of fiber per serving!
Equipment
- Instapot Can also be done with crockpot or on the stove in a pot
Ingredients
- 1.25 lb turkey sausage
- 1 tbsp olive oil
- 1 tbsp garlic minced or powder. Or Mrs Dash Italian
- 5 cups chopped kale Buy a large bag already chopped
- 1 can white beans rinse and drain. Or chickpeas/garbanzo beans
- 4 cups broth & 2 cups water
- 1 tsp each of red pepper flakes, salt, & pepper Or Mrs Dash Italian
Instructions
- If cooking in a pot: Heat up the oil, add the sausage and garlic, break up while cooking until totally brown and cooked through.
- If cooking in Instapot: Press Saute, add oil, add the sausage and cook for about 10 minutes, breaking up while cooking.If cooking in crockpot: break up as best as you can before adding the other ingredients.
- For a pot: Add the beans, broth, and seasonings then cook for 10 minutes
- For Instapot: Add the beans, broth, and seasonings, press the soup/broth button and it will cook for 30 minutes then allow for the vent to release for a couple minutes.For crockpot: Add the beans, broth, and seasonings, then cook for 3.5 hours on high.
- Stir in the kale then serve! Makes 4 servings.
