Veggie omelet
Did you know you can make yummy, fluffy eggs in the microwave?!? Eggs are a great way to "hide" veggies as well so try this recipe out with a mix of veggies to find which ones you like the most.
Ingredients
- 8 tbsp liquid eggs or just use 2 regular eggs
- 2 tbsp water or milk
- 2 oz mozzarella cheese shredded
- 1/2 cup cherry tomatoes diced or whole
- 1/2 cup spinach tear it up by hand
- 1 tsp onion & herb mrs dash
Instructions
- Mix all the ingredients in a microwave safe bowl
- Microwave for 2-5 minutes or until eggs are done
- If you do not like your veggies cooked can leave them out and add in at the end
